Stringy mucus related to my new septum piercing?

Mucus isn't usually related to septum piercings. When I got mine pierced, all I got was a bit of dried crust. (which is totally normal) I think you just got the rotten luck of getting sick. Just keep cleaning with the sea salt solution and you should be fine. Good luck and feel better soon!
